No added sugar muffins

This recipe came from a Weight Watchers book. They use apple juice and honey as sweetners. I find the grated apple doesn't cause me any problems, as it breaks down as the muffins cook. It seems like a lot of work, but it isn't really! (if you have a food processor and juicer for the apples, it only takes 10 minutes preparation time).

1 egg
75g melted butter or margerine
125ml plain yoghurt
100ml apple juice (or the juice from 1 apple)
3tbsp clear honey
2 apples, peeled, cored and grated

200g plain flour
2tsp baking powder
1/2 tsp bicarbonate of soda
Pinch of salt
1 tsp ground cinnamon

Before you start, preheat the oven to 180 degrees C.
Grease a 12-hole muffin tin (or lay out 12 cake cases on a baking tray).
Combine the first set of ingredients in one bowl.
Combine the second set in a different bowl.
Add the wet to the dry, being careful not to over-stir.
Immediately fill the muffin cases.
Bake for 20 minutes.
 
Gluten free

Great recipe, thanks :) This works well with almond flour ( for SCDers ) or a combination of almond flour and gluten free flour. Different textures, but still yummy. You can also substitute the apple for other flavours. Some I've done are:
blueberry and vanilla
banana and ginger
date and walnut
