I edited to add,
I tried these again today and doubled the baking soda. This new batch is lighter. I would stick with the original for brownies though


Mini Cupcakes

2/3 c. honey

1/2 c. melted butter or coconut oil

1 Tbsp. vanilla extract

3 eggs

1 c. almond flour (I used 3/4 cup almond flour and 1/4 cup pecan meal)

1/2 c. cocoa (the kind with just real cocoa and no other ingredients)

1/4 tsp. ea. baking soda and sea salt

I placed mini muffin pan liners in a mini muffin pan and then lightly sprayed with cooking oil. Filled 2/3 full and baked.

The above recipe was actually supposed to be a brownie recipe. You can bake it in a pan and cut like brownies. I haven't tried it that way yet

Frosting

Melt 3 Tbs butter, add
2 Tbsp. cocoa
Honey to taste

Let the above mixture cool.
Whip in 3 Tbsp. canned coconut milk (the thick part from a can that doesn't haven't stabilizers so it separates).

If it isn't thick enough, put it in the freezer for 5 or 10 minutes and then whip it some more.

I frost these and then keep them in the freezer until we are ready to eat them. The frosting tastes like ice cream.

So far E is doing just fine with cocoa!
