I think I'm going to try it sometime this summer! If anyone else tries it, post how it turns out. :)

In the comments below the recipe, someone also mentioned cutting cupcake size pieces and make cupcakes with the recipe?? I'm thinking that might be easier - you wouldn't have any issues with getting the icing on the side of the cake???

I love it because IF Grace can eat some fruits in the future, this is a great idea. You could even use other melons. It would be smaller but hey it might work. I've made coconut whip-cream. It's awesome!
