Hi Askim. Sorry for the late reply. I don't actually eat tofu but I looked up some older threads for tofu recipes and here are a few:

http://www.crohnsforum.com/showthread.php?t=16435 - I think you could replace the meat here with something else if you're vegetarian
This one has a Vegetarian Tofu Lasagna with Spinach Recipe (scroll down to post#6) http://www.crohnsforum.com/showthread.php?t=6503

We use this stuff called, Light Life. We basically just use it in place of hamburger and have put it in our spaghetti. What we do is cut up vegetables such as: onion, celery, asparagus, and broccoli. Put the cut up onion in a skillet or Wok with a little oil and cook till clear. Then, put in the other vegetables and cook till tender. When the vegetables are tender then you can put in the sauce, a little black pepper for seasoning & tofu and cook till everything is hot. Serve with noodles.

I loooove soondoobu (recipe). Add poached eggs for protein and dduk for starch -- delicious!

Soondubu mix is available. I just add the tofu, egg and dduk to it and a whole meal is ready in about 5 minutes. (You can add veggies if you can tolerate them, or leave them out).
