SCD 3 Ingredient muffins

Just tried this recipe - super easy and they are delightful!

The recipe says it makes 12, but I think it's probably more like 8. I tried to stretch it to 10, and ended up with small muffins, that were more like soft cookies. The dough doesn't rise, so you can fill the muffin tins pretty full.

Yes! They are soft and moist... But still pretty hearty and bread-ish for not having any flour.

Just tried these with the addition of acorn squash (baked first, then scooped out). They need a little longer to bake, and they are a little more pudding-cakey (moist at the bottom). Yum. I think these are now 4 ingredient muffins for me.
