Tuna fishcakes (serves 4)

250g mashed potato
salt and pepper
2 slices white bread with crusts removed, soaked in water
1 egg
lemon juice
2 tins tuna, drained
1 garlic clove, finely chopped
4 tablespoons parsley (optional)
150g toasted breadcrumbs

mix everything together except the breadcrumbs.
Make the mixture into balls, flatten them and coat with breadcrumbs.
Bake at 180 c for 20 minutes.

If you can't eat bread, use a little extra mash instead and leave off the coating!
