Casein

Casein are the primary proteins found in cow's milk and is a powerful Antigen causing the body to release histamine. When people think of intolerance to cow's milk, they usually think of lactose intolerance due to a lack of the enzyme lactase and are tested for this deficiency without taking casein into account. It is also a major component of cheese and has a variety of other uses including as an ingredient in glue. Yummy.
